Chicken for chicken salad
Washed Chicken breasts
Water
1/2 to 3/4 cup lemon juice
Lime pepper
Garlic powder
Wash chicken and set in bake pan. Put 1/4 inch water over chicken
Add at least 1/2 cup lemon juice
Sprinkle with lime pepper and garlic powder (generous amounts)
Bake at 350 degrees until chicken is white all the way through. I test by cutting through a thick piece.
Flip chicken once so it all cooks in the marinade.
As soon as chicken is white it is done!
7 chicken breasts cook for about 50 minutes depending on the size of them.
Do not overcook.
Chicken and Salsa
Cut pieces of washed chicken breasts up and cover with a jar of peach/pineapple salsa.
Bake in 350 degree oven for about 30 min.
Tuna Salad
Rinsed tuna
small container of Greek yogurt
chopped walnuts
red grapes
Rinse tuna well
Add yogurt, grapes (cut in halves), walnuts
Lite Cheesecakes
1/3 fat cream cheese (3 packages)
1/4 cup splenda
2 eggs
Blend all ingredients and pour into muffin cups that have been sprayed with nonstick spray.
Bake at 350 degrees until they start to brown a little on the top (30 minutes, depending on the size of cheesecakes)
Mixed raw nuts (almonds, pecans, cashews, and walnuts) No salt.
Baked veggies (add a little olive oil)
